Husk Distillers was founded by distiller Paul Messenger and his family in 2012 and they been producing innovative craft spirits ever since.

Ten minutes from some of Australia’s best surf beaches and overlooked by Wollumbin (Mt Warning), Husk was founded with a vision to become Australia’s first paddock-to-bottle agricultural rum distillery.
THE STORY OF INK GIN
Paul began tinkering with the recipe for Ink Gin between the cane harvests, when agricultural rum production was not and the distillery was quiet.
Ink Gin was born in 2015 after three years of development and experimentation.
After a global voyage of botanical discovery, Paul was introduced to dok un chan tea, the Thai butterfly pea drink and its colour changing properties, and he wondered if this botanical would work in a gin.
In 2011 he bought 5 seeds for $5, planted them in the garden and a few months later picked enough flowers to start trial infusions.
That was definitely a eureka moment, but it would take another 4 long years before we were ready to launch Ink Gin in the market.
After years of trialling dozens of botanicals - exotic, traditional and local natives - we finally had the perfect blend to complement and capture this beautiful flower in a bottle.
